Guinea Hen feathers might make a nice flounder- the mottled effect with the gray and while spots could work well. Generally each batch of feathers includes some with a few large spots as well as many with many smaller spots- my personal preference is for more/smaller spots.

Also, Guinea Hen makes excellent cheeks on streamers-
The Footer Special is one example and is a great Landlocked salmon and trout streamer used in Maine and Atlantic Canada
