The bigger the plug the less effect a slight change in hook size should have on the plug (relative mass). Although, if it's perfectly trimmed one way, it whould have a drastic effect. Depends on the style of plug I guess. Maybe mix and match hook sizes? Big on the belly hook, smaller on the tail? Let me know how your experiments go.
I like your approach better. Try something, see what it does, try something else. I tend to overcomplicate things sometimes, but a little physics never hurt anybody. Works for fly casting mechanics, should work for plug builders too!
