I've watched them tailing (usually on the opposite bank) pushing quite large rocks out of the way to get at a crayfish.

Targetting them is a double challenge:

First, you have to make a great presentation and drop the fly right into the zone. Second, you need the carp to get to the fly quicker than the 12 inch smallmouth bass that always seem to be tagging along behind a feeding carp. I guess the carp do o.k. but those smallies sure get a lot of free meals :)
