I'll try to answer your questions from the standpoint of a flyfishing only guy.
As far as wind goes, the only time the wind is really a huge factor is when it's a gale and is directly into your face. Or secondly, when it's perpendicular to your right shoulder and it blows your cast directly into your head.
In these conditions, fly rodders will try to find beaches that will allow for some casting. You can always find a spot to fish to use the wind to your advantage. It's part of the hunt.
Flyfishing is not really a "means to an end". It is truly sport and that is exactly how I treat it. At times the fish have the advantage and at times the angler has the advantage.
I have never thrown a fly longer than five inches. In fact I once hooked a sixty pound tuna on a fly that was barely two inches long. If your friends feel the need to throw 10" bunker flies then you're right, they might as well throw the plugs. The allure of flyfishing is in the subtlety of the pusuit and the catch.
As for the surf fly rodders of Montauk. They went to Camp Hero! When they opened that coastline to flyfishing every fly rodder was in heaven. The rocky coastline in that area is loaded with bass and is much less crowded than the point.
As far as what advantage a fly rodder has over a plugger that is a difficult question to answer. Again, sometimes the pluggers have the edge and sometimes the fly rodders do. When I ply the beaches I'm always thinking "small". Where can I fish with the least amount of effort to produce the highest chance of success. Sometimes it's into a bathtub sized pool behind a boulder, sometimes I have to wade to a rock and cast further. It all depends on the conditions and whether or not bass are feeding and on what.
Lastly, but very importantly, is your confidence. If you lose confidence in anything you're doing; whether it be the type of rod you're using, the fly, whatever, you're going to have only limited success and therefore not much fun.
If you confine yourself to flyfishing only and enjoy it with confidence you'll soon discover you'll never need to go back to plugging.
