Subject: water tables, which one is most productive ?

when fishing surf with the fly, if you had a choice of saying which water table was most productive, which one would it be on a shallow beach ?
also, as the water tables have lateral current, would you fish a swung in the current fly, or a dead drifted up-current and mend style, or perhaps both.

we used to use intermediate lines to fish surf but with little success. Now, we are trying floating lines at night in area's that do throw up decent fish to bait.

We are talking Great British Atlantic Sea Bass here btw, but we have found that very much like the stripers, they do show a preference to come closer under dark, dark night conditions.

If anyone can give some general pointers on where we should concentrate our effort I'd appreciate it.

p:s would plugging the surf with teasers give any indication as to where the fish are lying in the waves or would the extra action most likely draw fish in from out of fly rod range ?
