Take a look on the main board at the post about surf fishing basics. IT is pretty simple and there is an article about sand beach fishing in the archives that talks about presentations that work.
What do you mean by water tables?
You do use both casting and stripping a fly and dead drift with the current interchangeably.
Going to floating lines is a wise decision as you will have more control and will catch more fish because of that. Fish do hold on station in the surf and often the fly has to come to them naturally with the flow of current as they will not move to it except to intercept it as it comes.
I am sure that your bass act like ours do in the surf.
There is a lot written about it on the site. Poke around I am sure you will find much to entertain you.
