You have to ease into the hookset. Do not set with the rod tip! Sweep set and reel till you feel the weight of the fish. Then reel down hard and then set after the hook is started in the jaw.
IF you set with the tip quickly you will pop the jig out of his mouth before he closes his mouth. IF you feel a tap, that is him sucking it in then he closes his mouth.
IT is a very relaxed way of hook setting and it is almost fool proof. The reason you were hooking little fish is they have small mouths and close them quicker. You were missing the larger fish by reacting to their sucking in the jig.
Try it and also try not setting at all but just put back pressure on the fish and then you will get the feel. They do not spit it out they bite down harder when you put back pressure on them. Try it you will be amazed at how long they will hold the jig and swim with it.
